One of the most famous areas in France for producing Chardonnay, the cool vineyards of Chablis are the most northerly of the Burgundy wine region. Divided into four appellations, Chablis, Premier Cru, Grand Cru and Petit Chablis, the wines produced here tend to be dry with high acidity and crisp flavours of apple and lemon.
